Set-it-and-forget-it slow cooker barbacoa with chipotle, cumin, and a splash of lime. Shred it for tacos, burritos, nachos, or rice bowls.
Barbacoa from Chipotle has a very specific vibe. It is tender and shreddable, with smoky chile heat that builds slowly, plus that little tangy edge that makes you keep going back for one more bite. This is my at-home version, built with ingredients you can grab at a normal grocery store and cooked until the beef basically gives up and turns into taco filling on purpose.
We are doing a quick blender sauce, a slow braise (slow cooker or Instant Pot), and a final toss in the cooking juices so every strand of beef tastes like the sauce, not just the top layer.
