There are two kinds of salads in this world: the ones you politely eat, and the ones you keep “taste testing” straight out of the bowl like a kitchen goblin. This chipotle vinaigrette is firmly in the second category.
It is smoky, tangy, and just sweet enough to round out the heat. The texture is the real magic trick, though. A little mayo helps emulsify the dressing so it turns creamy and clingy, meaning it actually stays on your lettuce, your roasted veggies, your chicken, your rice bowl, whatever you are eating this week.
You can shake it in a jar, but I strongly recommend the blender for the smoothest, restaurant-style finish. Either way, it is fast, flexible, and very forgiving. Taste as you go. You are allowed.
