Celery has a reputation as the crunchy sidekick. The thing you grab for tuna salad, then ignore the rest of the bunch until it turns a little too bendy in the crisper drawer. This soup is my way of giving celery the main-character moment it deserves.
Here’s the move: we sweat a whole lot of celery with onion and garlic until it smells sweet and savory, then simmer it with potato for body. After a quick blend, we finish with lemon for brightness and a tiny hit of cream for that spoon-coating, cozy texture. And because I cannot leave well enough alone, we throw crunchy croutons on top, because creamy plus crisp is basically a universal law.
