Freeze: Creamy sauces with sour cream can get a little grainy after freezing, but it is still workable. If you want to freeze, freeze before adding sour cream. Thaw, reheat, then stir in sour cream off the heat.

For extra depth, use a mix: cremini plus shiitake, oyster, or a small handful of rehydrated porcini (and use some of the soaking liquid in the sauce, but strain it through a coffee filter or paper towel first so you do not get grit).

How do I keep sour cream from curdling?

Two rules: lower the heat and temper if needed. Turn the burner off before adding sour cream. If your pan is screaming hot, stir a spoonful of warm sauce into the sour cream in a bowl first, then add it back to the pan. Also, full-fat sour cream is a little more forgiving than low-fat.

Can I make it vegan?
