Tofu gets a bad rap from people who have only had it in its sad, watery era. The air fryer fixes that. It turns tofu into little crunchy-edged nuggets that feel snackable, dinner-worthy, and dangerously easy to “taste-test” until half the batch mysteriously disappears.

This recipe is my reliable, low-drama method: press (or at least blot), season hard, add a little cornstarch for that crisp shell, then let the air fryer do the heavy lifting. I’m also giving you an optional sticky soy-garlic glaze because sometimes you want crispy and shiny. Both moods are valid.

Fridge: Store cooled tofu in an airtight container for 3 to 4 days, ideally if it is promptly refrigerated. If you made the glaze, keep any extra sauce separate if possible.

Reheat to bring back crisp: Air fry at 375°F for 4 to 6 minutes, shaking halfway, or until hot and re-crisped. A toaster oven also works. Microwaving is fine for speed, but it softens the edges.

Meal prep tip: Make a double batch and keep it unglazed. Add sauces right before serving so it stays crisp longer.

Common Questions

Do I have to press tofu?

You do not have to, but you should at least blot it well. Pressing for 15 to 30 minutes helps it crisp faster and brown more evenly. If you are in a rush, wrap the block in paper towels, press firmly, and swap towels once.

What tofu is best for the air fryer?

Extra-firm is the easiest and crisps the best. Firm works too, but be gentler when tossing so it does not crumble. Also, some brands run wetter than others, so if your tofu seems extra juicy, lean toward the longer press.

Why isn’t my tofu crispy?

Common culprits: too much moisture (press more), overcrowding (cook in a single layer), or not enough starch (cornstarch helps a lot). Also make sure the tofu is coated, then shake off any loose, dry cornstarch, but keep the tacky, paste-like coating on the cubes.

Can I skip the oil?

Yes. It will still crisp, just a little less evenly golden. If you skip oil, make sure your basket is clean and lightly sprayed if sticking is an issue.
