Crispy sheet-pan tacos that make leftover rotisserie chicken taste brand new, plus lime crema and quick pickled onions. Ready fast and very hard to stop eating.
If a burrito and a crunchwrap had a messy little love story, it would end with a chimichanga. You get the cozy, saucy chicken filling, the melty cheese situation, and then the best part: that shatter-crisp tortilla shell that makes a very loud, very satisfying crunch.
This version is weeknight-friendly on purpose. The filling uses cooked shredded chicken (rotisserie is absolutely invited), a few pantry spices, and just enough salsa to keep things juicy without turning your tortilla into a sad sponge. We will pan-fry for peak crisp edges, but I also included baked and air-fryer routes for when you want the crunch with less oil drama.
