Fried potatoes are one of those forever foods. They show up at breakfast next to eggs, they hold their own under a piece of fish, and they magically turn a random fridge clean-out into dinner. The goal is simple: crisp edges, fluffy insides, and seasoning that makes you keep “testing” pieces straight out of the pan.
This is my go-to skillet method when I want dependable crunch without deep frying. We do a quick soak (optional but worth it), a little steam time under a lid to cook the centers, then we take the lid off and let the potatoes get loud and golden.
