It is cozy and creamy without being heavy, bright from lime and cilantro, and just spicy enough to keep you interested.
This version keeps ingredients accessible and the instructions low drama. We build flavor with green chiles, cumin, oregano, and a little smoked paprika, then finish with cream cheese for that signature silky broth. You can keep it mild for the whole family or crank it up at the end with jalapenos and hot sauce. Both are correct.
