Can I assemble this the night before?
Yes. Brown the sausage, cool it, then mix everything (or layer it) and refrigerate overnight. Keep it refrigerated at 40°F or below and do not let the egg mixture sit out at room temp.
Slow cooker insert note: If you refrigerate the mixture in the ceramic insert, let the insert sit at room temperature for 15 to 20 minutes before turning the slow cooker on. Heating a fridge-cold ceramic insert can cause thermal shock and crack it. If you are unsure, prep in a bowl, cover, and pour into the insert in the morning instead.
In the morning, give it a quick stir if you mixed it in a bowl, then pour into the slow cooker. Cook time may run a bit longer if everything is very cold.
How do I keep it from getting watery?
Two big fixes: cook and drain the sausage well, and use shredded hash browns. You can add them straight from frozen, or thaw them and squeeze out excess moisture with a clean towel. Also avoid piling on super-wet veggies like raw mushrooms unless you sauté them first.
Can I use fresh potatoes instead of frozen hash browns?
You can, but shred them and rinse, then squeeze them very dry. Frozen hash browns are the easy button and give consistent results.
When is it done?
The center should be set, not jiggly, and an instant-read thermometer in the middle should read 160°F. Use doneness cues first, because slow cookers vary a lot, and newer or hotter models can finish sooner. If the edges are done but the center is soft, keep cooking and check every 20 minutes.
Low or high?
LOW gives the most even set. HIGH works when you are short on time. Plan for about 2 to 3 hours on HIGH, but start checking early and go by a set center and 160°F. Either way, let it rest 10 to 15 minutes before slicing.
Will the edges get crispy?
Slow cookers are more “gentle steam” than “crisp machine,” so expect golden edges at the perimeter, not skillet-crispy hash browns. If you want more browning, spoon the cooked casserole into a baking dish, sprinkle a little extra cheese on top, and broil for 2 to 4 minutes (watch closely).
