Elote is one of those foods that makes you involuntarily stop talking for a second because your brain is busy going, wait, why is this so good? Sweet corn with smoky char, tangy lime, creamy sauce, salty cheese, and a little chili heat. It is loud in the best way.
This elote dip is my home-kitchen version of that street corn magic. It is relaxed, fast, and built for scooping. You can serve it warm and melty right off the stove, or chill it for a thicker, snack-board situation. Either way, it disappears.
