Green peppers are the unsung weeknight hero. They are cheap, always around, and they bring that fresh, slightly bitter snap that keeps rich food from feeling heavy. This skillet is my favorite way to let green bell peppers do their thing without turning them into sad, limp ribbons.
We are going for crisp-tender peppers, browned sausage, and a quick tomato sauce that tastes like it cooked all day. Finish with mozzarella, then serve it however your house runs: over pasta, spooned onto rice, or straight out of the pan with torn bread and zero shame.
