Grilled zucchini gets a bad rap because it’s so easy to overcook. One minute it’s bronzed and snackable, the next it’s limp and watery and you’re wondering why you even turned on the grill. This version is my go-to because it’s built for crisp edges and a tender bite, plus a bright lemon garlic finish that makes the whole thing taste alive.
We keep it simple: cut zucchini into planks so they don’t fall through the grates, salt just enough to wake it up, grill hot and fast, then hit it with lemon, herbs, and a little optional Parmesan if you’re feeling extra.
