Lentils are one of my favorite pantry ingredients because they are cheap, fast, and weirdly good at turning a random weeknight into something that feels like a real dinner. This soup is the version I make when I want cozy carbs energy but also want my food to taste alive. The secret is not complicated. We build a solid base with onion, carrots, celery, and tomato paste, then finish with lemon juice and a quick garlicky lemon oil that makes the whole pot snap into focus.
It is forgiving, meal-prep friendly, and if you have picky eaters at home, it is easy to blend a portion for a smoother texture without turning the whole thing into baby food. Taste as you go. Adjust the lemon at the end. And do not skip the salt. Lentils love salt. (Also, broths vary, so seasoning at the end is where the magic happens.)
