If you want low carb chicken that does not feel like you are being punished, make this. It is the weeknight trifecta: crisp edges on the chicken, a bright creamy sauce you will absolutely swipe with a spoon, and a handful of spinach that wilts in like it belongs there.

This is my go-to when I want something cozy but still kinda snappy. Sun-dried tomatoes bring the tang, garlic does the heavy lifting, and Parmesan makes everything taste like it had a plan. It all happens in one skillet, which means less cleanup and more time to stand at the stove “just tasting” the sauce. Highly encouraged.

Why It Works

  • One-pan flavor layering: you brown the chicken first, then build the sauce in the same skillet so you keep all those tasty browned bits.
  • Low carb but satisfying: the sauce is creamy and rich, but balanced with garlic and the tangy pop of sun-dried tomatoes.
  • Fast, forgiving, and flexible: works with breasts or thighs, and the sauce can be loosened or thickened in about 60 seconds.
  • Great for meal prep: reheats well and stays juicy thanks to the sauce.

Storage Tips

Refrigerate: Store in an airtight container for up to 4 days. Keep extra sauce with the chicken so it reheats tender, not sad.

Reheat: Warm gently in a skillet over medium-low heat with a splash of broth, water, or cream to loosen the sauce. Microwave works too, but do 45-second bursts and stir the sauce so it does not separate.

Freeze: You can freeze it for up to 2 months, but creamy sauces can get a little grainy after thawing. If that happens, reheat slowly (do not boil) and whisk in 1 to 2 teaspoons of cream or a small knob of butter to bring it back together.

Common Questions

Can I make this with chicken thighs?

Yes. Boneless skinless thighs are amazing here and stay extra juicy. They may need a couple more minutes to cook through depending on thickness. Go by temperature: 165 F in the thickest part.

Is this keto?

It can be, but it depends on your ingredients. Sun-dried tomatoes vary a lot by brand (some have added sugar), and the carbs can add up fast. If you are strict keto, check the label, use heavy cream (not half-and-half), and keep the tomatoes to taste. When in doubt, call it “low carb” and let the nutrition label do the talking.

My sauce looks too thick. What do I do?

Add a splash of chicken broth and stir. Do it a little at a time until it looks silky again.

My sauce looks thin. How do I thicken it?

Simmer 2 to 4 minutes to reduce. The sauce should coat the back of a spoon. If you want it thicker fast, stir in 2 to 3 tablespoons more Parmesan, or add 1 ounce of cream cheese and whisk until smooth.

What can I use instead of sun-dried tomatoes?

Roasted red peppers work great. You will lose a little tang, so add a squeeze of lemon at the end to keep things bright.

Can I add mushrooms?

Absolutely. Sauté 8 ounces sliced mushrooms after the chicken, then proceed with the sauce.

Do I need to use fresh Parmesan?

For the smoothest sauce, use freshly grated Parmesan (the kind you grate yourself). The shelf-stable, powdery stuff can turn grainy and does not melt as nicely.

I started making versions of this when I was trying to keep dinner simple without giving up the “restaurant-ish” feeling. You know the vibe: you want a sauce that clings, you want garlic, you want something you would happily pay for, but you also want it done before you accidentally start a second load of laundry at 9:30 PM.

This skillet is my sweet spot. It is low carb, but it is not a compromise meal. It is the kind of dinner where you plate it, taste the sauce, and immediately think, okay, we are doing great tonight.
