Nopales are one of those ingredients that feel mysterious until you cook them once. Then you’re like, wait, this is just a vegetable with a little attitude. They are tart and green like a cross between green beans and okra, and yes, they can get a bit slippery if you treat them wrong. The good news: we’re going to treat them right.
This nopales salad is my go-to when I want something fresh that still eats like a real meal. Tender cactus, juicy tomato, crisp onion, lots of lime, and a snowfall of cotija. It is bright, briny, and the kind of bowl you keep “tasting” until it is suddenly gone.
