Fresh vs frozen passionfruit: what should I use?
Either works. Fresh passionfruit pulp is amazing when it is in season and fragrant. Frozen passionfruit pulp is the weeknight hero because it is consistent and already pulped. Just thaw before measuring. If you are buying frozen, look for unsweetened pulp or purée.
How many fresh passionfruit do I need for 1/2 cup pulp?
Usually about 4 to 6 passionfruit, depending on size and how juicy they are. Scoop out the pulp and measure it, seeds and all.
Do I have to strain out the seeds?
Nope. The seeds are edible and add crunch. If you want a silky curd for pastry work, strain the pulp first, or strain the finished curd through a fine mesh sieve. Personally, I like a little texture when I am spooning it over yogurt.
Why did my curd turn lumpy?
Usually the heat was a little too high, or the eggs got cooked in pockets. Keep the pan on medium low and whisk constantly. Also, do not let it boil. If it gets a little lumpy anyway, strain it. Curd is nice like that, it forgives.
How do I know when it is done?
It should be thick enough to coat the back of a spoon, and a finger swiped through should leave a clean line. Visually, it tends to go from a bit foamy to glossy and noticeably thicker. If you have a thermometer, aim for around 170°F (it can go up to 175°F max, but higher heat can push it toward overcooked on some stoves).
My curd is not thickening. What happened?
It probably just needs a little more time. Keep whisking over medium low heat and be patient. If it is truly not changing after several minutes, nudge the heat up slightly, but still do not let it simmer or boil.
My curd set up too thick in the fridge. Can I fix it?
Yes. Let it sit at room temp for a few minutes, then whisk until smooth. A tiny splash of warm water can loosen it if needed, but go slow.
Can I make this dairy free?
Yes. Swap the butter for a good plant based butter. Results can vary by brand, so I recommend a stick style option (they tend to behave more like butter). It should still set, with a slightly different flavor.
