These red velvet cookies are my favorite way to get that classic cocoa plus vanilla flavor without committing to cake layers, frosting, and a sink full of dishes.
You get thick, chewy centers, slightly crisp edges, and a gorgeous red color. Then you can take it over the top with a quick cream cheese swirl that bakes right into the cookie like a little cheesecake surprise. Optional, but highly encouraged.
