Kielbasa is one of those weeknight shortcuts that still feels like you cooked. It is already seasoned, it browns like a champ, and it plays ridiculously well with humble vegetables. This sheet pan version is my go-to when I want crispy edges, cozy carbs, and a little hit of tangy brightness at the end.
We roast potatoes until they are halfway to golden, then add cabbage and red onion so they can start caramelizing. The kielbasa goes on after that, so it stays juicy while the outside gets bronzed. A quick mustard glaze hits the pan in the final minutes, which means you get that “pause mid-bite” seasoning moment without babysitting a saucepan.
