Juicy chicken in a creamy garlic Parmesan sauce with spinach and sun-dried tomatoes. One pan, low carb, and wildly weeknight-friendly.
Slow cookers are basically the antidote to the whole day. You toss in a few real ingredients, go live your life, and come back to a house that smells like you definitely had it together all along.
This one is my cozy, slightly bold, restaurant-ish answer to weeknight pasta: slow cooker Tuscan chicken turned into a creamy pasta situation with sun-dried tomatoes, garlic, spinach, and a finish of Parmesan. It hits that sweet spot of comfort food that still tastes bright and intentional. Also, it is forgiving, like "I am running late and dinner still works" forgiving.
Quick safety note: For slow cookers, start with fully thawed chicken (or use fresh). Frozen chicken takes too long to heat through in a slow cooker, and that is not a gamble worth taking.
