A simple, craveable cheese quesadilla with crisp edges and a stretchy center. Learn the pan trick that keeps it golden, not greasy.
If you have ever stood in front of the fridge with the kind of hunger that makes you impatient and creative, meet my current obsession: tecipe. Yes, it sounds like a typo, but it is my little nickname for a tortilla recipe that eats like a tiny pizza. Tortilla + recipe = tecipe, and it is exactly the level of chaotic good cooking I need on busy days.
It is not trying to be a perfect pizza, and it is not trying to be an omelet. It is a crispy tortilla that gets an egg cracked right on top, a snowfall of cheese, and whatever toppings you can grab with one hand while the other hand is already heating the pan.
This is the recipe I make when I want crisp edges, a jammy yolk, and something that feels fun without being a whole project. It is weeknight friendly, kid friendly if you keep it simple, and adult friendly if you bring the hot sauce and a slightly reckless amount of seasoning.
