Crisp greens, quick-blanched asparagus and peas, radishes, herbs, feta, and a lemony vinaigrette. A springy side or light lunch that actually delivers flavor.
Salad Niçoise is my kind of dinner because it is a salad that actually commits. You get cozy carbs (hello, potatoes), crisp-tender green beans, rich tuna, jammy eggs, and enough briny olives and punchy dressing to make the whole thing feel awake.
This bistro-style version keeps the ingredients accessible and the vibe relaxed. Nothing fancy required, but we are going to be intentional about a few small moves: salt the potato water, blanch the green beans so they stay bright, and whisk a vinaigrette with enough Dijon to cling to everything in the best way.
It is also a choose-your-own-adventure situation. Serve it on one big platter for a family-style moment, or portion it into containers for low-drama lunches that feel like you have your life together.
