A no-fuss dessert using cake mix: thick, chewy cookie bars with crisp edges and customizable mix-ins. Perfect for bake sales, potlucks, or weeknights.
If you have a box of cake mix and about 10 minutes of patience, you are dangerously close to warm cookies. Cake mix cookies are my favorite kind of kitchen shortcut because they do not taste like a shortcut. You get a thick, bakery-style chew, those little crisp browned edges, and a base that basically begs you to throw in chocolate chips, sprinkles, chopped candy, or whatever is hanging out in your pantry.
This is the version I make when I want maximum payoff with minimum dishes: one bowl, one spoon, and one baking sheet (or two if you want to bake everything at once). It is about 10 minutes hands-on, and roughly 20 minutes total once you count baking and a quick cool. I will also give you the tiny tweaks that keep them from spreading into sad pancakes, because we are here for cozy carbs, not cookie regret.
