Shelf-stable salsa is one of those pantry shortcuts I will defend forever. It is already doing the work we normally beg of weeknight cooking: tomatoes, onion, chiles, acid, salt, and a little sweetness, all in one jar. Which means if you have chicken and a can of beans, dinner is basically just waiting for you to notice it.
This canned salsa chicken is my go-to when I need something that tastes like I tried harder than I did.
