Can I make baked corn ahead of time?
Yes. Mix everything, cover, and refrigerate the unbaked casserole up to 24 hours. For more even baking, let it sit at room temperature for 20 to 30 minutes while the oven preheats. Then bake as directed. If it goes into the oven cold, add 5 to 10 minutes and keep an eye on the center.
Why is my corn casserole watery?
Usually it is either underbaked or the corn was very wet. Drain the whole kernel corn well, and bake until the center is set and does not jiggle like liquid. Resting helps a lot too, so let it sit 10 minutes before serving so it can tighten up. (Overmixing is not usually the culprit here, so do not lose sleep over it.)
Do I have to use Jiffy corn muffin mix?
No. This recipe uses a simple flour and baking powder base so you do not need a box mix. If you love the Jiffy style sweetness, add 1 to 2 tablespoons of sugar.
Can I make it spicy?
Absolutely. Add 1 diced jalapeño (seeds removed for mild, left in for heat), a pinch of cayenne, or swap in pepper jack for part of the cheddar.
What size baking dish should I use?
A standard 9x13-inch dish gives you a nice thickness and plenty of golden top surface. Want it thicker? Use a 9x9-inch dish that is at least 2 inches deep and set it on a sheet pan just in case. Bake about 40 to 55 minutes, and start checking around 40 minutes.
