Macaroni salad has a reputation for being either amazing or a little sad. We are not doing sad today. This is my classic mac salad that hits the sweet spot: creamy but not heavy, tangy but not sharp, and packed with crunchy bits so every bite has something going on.
The key is simple: salt the pasta water, rinse just enough to cool it down, then give the noodles time to drink in a punchy dressing.
