Pesto pasta salad is my go-to when I need something that feels like summer in a bowl but still counts as real food. It’s cold, it’s fast, it’s wildly snackable, and it has that magical quality where you keep “just tasting” until you accidentally eat lunch standing at the counter.
This version is bright and balanced. We loosen the pesto with lemon and a little pasta water so it coats instead of clumping. We cool the pasta the right way so it doesn’t drink all the sauce.
