This easy khaman dhokla recipe steams up light and airy, then gets drenched in a mustard seed and curry leaf tempering. Perfect with green chutney.
Coconut chutney is one of those quietly powerful kitchen moves. It looks simple, almost shy, then you scoop it up with a piece of dosa or a fluffy idli and suddenly everything tastes brighter, toastier, and more alive.
This is my go-to South Indian style coconut chutney: fresh or frozen coconut blended with roasted split chickpeas for body, green chile for a little zip, and a squeeze of lemon or lime to wake it up. Then we do the part that makes you feel like a culinary wizard, even on a Tuesday: a quick tempering in hot oil with mustard seeds, curry leaves, and dried chile. It crackles, it perfumes the whole kitchen, and it turns a good chutney into a great one.
Quick coconut note: If your coconut is frozen, let it sit at room temp for 5 to 10 minutes so it blends smoothly. If you are using unsweetened fine/desiccated coconut, soak it in warm water for 5 to 10 minutes, then blend (you may need a touch more water).
