A fast, cozy, high-flavor dinner with crisp-edged shrimp, garlicky butter sauce, and lemony rice. Minimal dishes, maximum payoff.
Shrimp orzo is my favorite kind of weeknight flex. It looks like a restaurant bowl, but it is truly a fast, one-pan dinner you can pull off on a normal Tuesday. The move is simple: sear the shrimp hard enough to get those crisp edges, then build a quick, lemony, garlicky pan sauce and let the orzo drink it up until it turns glossy and cozy.
This version goes creamy without heavy cream. We let Parmesan, a little butter, and the starch from the orzo do the work. Add spinach at the end for that “yes, we ate something green” feeling, and finish with lemon zest so the whole thing tastes bright, not heavy.
