A warm, practical red lentil stew that cooks fast, tastes bold, and stores like a dream. One pot, simple ingredients, big comfort.
Red lentils are my weeknight cheat code. They cook fast, turn silky without any blending, and basically beg to be turned into something cozy and saucy. This is the kind of dinner that feels like you tried harder than you did, which is my favorite genre of cooking.
We are building a quick flavor base with onion, garlic, ginger, and curry spices, then letting red lentils and coconut milk do their creamy thing. A squeeze of lime at the end is nonnegotiable. It wakes everything up and keeps the whole bowl from feeling heavy.
