If your brain is asking for comfort food but your schedule is asking for something that does not trash the kitchen, this creamy spinach tortellini is the peace treaty. Freeze: Cream sauces can get a little grainy after freezing, but it is still totally edible. If you want to freeze, do it for up to 1 month and reheat gently with extra liquid while stirring.

Can I use frozen spinach instead of fresh?

Yes. Thaw it first and squeeze it dry in a clean towel, then stir it in near the end just like you would with fresh. Start with about 1 cup thawed and squeezed frozen spinach.

Can I use half-and-half or milk instead of heavy cream?

Half-and-half works well. Milk can work too, but the sauce will be thinner. If using milk, add an extra tablespoon or two of Parmesan and let it gently simmer a bit longer to tighten up.

Do I have to use cheese tortellini?

Nope. Any refrigerated tortellini or ravioli works. If you use frozen, you may need a few extra minutes and a small splash more broth.

How do I keep the sauce from breaking?

Keep the heat at a gentle simmer and do not boil hard after adding the cream. Also, add the Parmesan off-heat or on low, and stir until it melts.

My sauce is too thick or too thin. How do I fix it?

Too thick: Add a splash of broth, water, or milk and stir over low heat until it loosens up. Too thin: Let it simmer uncovered for 1 to 3 minutes, stirring, until it thickens.

What protein goes best with this?

Italian sausage is the loudest and coziest. Rotisserie chicken is the easiest. White beans are a great pantry option if you want it meatless.

Does it matter what kind of Parmesan I use?

Finely grated Parmesan off the block melts the smoothest. The shelf-stable pre-grated stuff can work in a pinch, but it tends to melt a little less silky.
