Creamy, crunchy, and lightly tangy turkey salad that comes together fast. Perfect for lunches, meal prep, and using up leftover turkey.
Turkey salad is what I make when I want lunch to feel like a win, not a chore. It is creamy but not heavy, crunchy in all the right places, and bright enough that you do not feel like you are eating leftovers out of obligation.
This version leans on a little lemon and Dijon to keep the flavor awake, plus celery and red onion for snap. If your turkey is already cooked and cooled, you are about 10 minutes away from a bowl of “okay wow” that turns into sandwiches, wraps, crackers, or a straight-from-the-fridge fork situation.
