A fast, cozy dinner bowl with crispy shawarma-spiced chickpeas, lemony yogurt sauce, and fresh crunch. Meal prep friendly and easy to customize.
Garbanzo beans are the friend who always shows up on time. Cheap, reliable, and somehow ready to become dinner with about ten minutes of hands-on prep if you treat them right. Today we are giving them what they deserve: high heat, a little oil, and enough seasoning to make you pause mid-bite and do that quiet, impressed nod at your own cooking.
These bowls are built on a simple formula: crispy roasted chickpeas (same thing as garbanzo beans), a bright lemon tahini sauce, and whatever cozy carb you have the energy for. Rice, quinoa, pita, leftover roasted potatoes. You cannot really mess this up, but you can absolutely make it taste like you planned it.
Diet notes: vegan if you skip the feta, and gluten-free if you choose a gluten-free grain.
