Greek food has a special talent: it tastes sunny even when you are eating in sweatpants on a Tuesday. This lemony rice is my go-to when I want something cozy but not heavy, and when I want the kind of seasoning that makes you pause mid-bite like, okay wow.
Think fluffy rice, a hit of bright lemon, lots of herbs, and spinach folded in until it is silky. Then we finish with feta because feta is basically punctuation.
