I have a soft spot for Brussels sprouts (I call them Brussels cabbage sometimes) that come out crisp on the outside and tender in the middle, like the vegetable equivalent of a good toasted bagel. This is the no drama version: crank the oven, give them plenty of space, and let the heat do the heavy lifting.
Then we do the part I care about most: the finish. A squeeze of lemon to wake everything up, Parmesan for salty comfort, and a little chili flake if you want that “wait, what is that?” moment in the best way.
