Tofu stir fry is one of those weeknight dinners that can be either kind of sad or shockingly good, and the difference is usually just two things: (1) getting tofu actually crisp, and (2) using a sauce that tastes like something you would happily pay for.
This is my go-to version when I want bright, punchy flavor with minimal drama. We press the tofu just enough to behave, coat it lightly so it browns, then hit everything with a garlicky ginger sauce that turns glossy in the pan and clings to the veggies like it has a plan.
