A no-fuss tuna cake recipe with golden edges, a tender center, and a punchy lemony sauce. Great for weeknights, meal prep, and picky eaters.
Tuna patties are one of those quietly genius dinners. They live in your pantry, they cook in one pan, and they somehow feel like you tried. I love them because they hit all the important notes: crisp edges, a tender middle, and enough lemon and Dijon to make canned tuna taste like it got dressed up for a night out.
This version stays very weeknight. No fancy ingredients, no weird binders, no dry hockey pucks. Just a mixture you can shape, chill for a few minutes, then pan-sear until golden. If you have time for a quick sauce, I included my favorite lazy one. If you do not, a squeeze of lemon and a little hot sauce will still carry you home.
