Can I use baby back ribs or spare ribs?
Yes. Baby backs are leaner and often finish a little sooner. Spare ribs are meatier and a little richer. Either works. Just cook to tenderness, not the clock.
Do I need to remove the membrane?
I recommend it. That papery membrane on the bone side can turn chewy. Slide a butter knife under it, grab with a paper towel, and peel. If it fights you, score it in a few spots and keep going.
How long do ribs take in a crock pot?
Most racks take 6 to 8 hours on low or 3 to 4 hours on high, depending on rib type, thickness, and how hot your slow cooker runs. You are looking for ribs that bend easily when lifted and feel very tender when you twist a bone. For extra certainty, use a thermometer. Pork is safe at 145°F, but ribs are usually best for tenderness closer to 190 to 205°F.
Is “pull back from the bones” a reliable doneness test?
