If you keep a couple cans of chickpeas in the pantry, you are always about 30 minutes away from a dinner that feels like you actually had a plan. These curry garbanzo beans are my favorite kind of weeknight cooking: one pan, big flavor, and a sauce that’s creamy enough to cling to rice, but still bright enough to make you go back in for “just one more” bite.
The trick is building flavor fast. We bloom the spices in oil, let tomato paste caramelize just a bit, then simmer everything in coconut milk until it goes glossy. Finish with lemon and something green, and suddenly your basic chickpeas feel like dinner.
