Do I have to blend the mixture?
You do not have to, but blending is the difference between “pretty good” and “wow, these are actually fluffy.” If you do not have a blender, whisk very well and use small curd cottage cheese for the smoothest texture.
Why did my egg white bites deflate?
A little settling is normal. Bigger deflation usually comes from overbaking, baking too hot, or using watery mix-ins. Pull them when the centers are just set (a tiny jiggle is fine) and you do not see any liquid egg in the middle.
How do I keep them from sticking?
Grease the muffin pan generously, even if it is nonstick. A light spray is okay, but I prefer brushing with oil or butter so the sides release cleanly.
Can I make these in silicone molds?
Yes. Silicone molds release beautifully. Place them on a sheet pan for stability, and start checking for doneness a few minutes early.
Can I add whole eggs too?
Absolutely. For a richer bite, you can swap in 2 large whole eggs and reduce the egg whites by about 1/3 cup (so the total liquid stays close). It is forgiving, so do not stress if it is not exact, just keep an eye on doneness.
What mix-ins work best?
Stick to mix-ins that are not watery, or drain them well. As a general rule, keep total add-ins to about 1 to 1 1/2 cups so the bites stay fluffy and set properly. Great options include cooked turkey sausage crumbles, diced ham, sautéed mushrooms, broccoli florets, feta, pepper jack, or scallions.
Can I use a mini muffin tin?
Yes. Grease well and start checking at 10 to 12 minutes. They go from perfect to dry pretty fast when they are mini.
