Green beans are one of those sides that can be either boring and squeaky or bright, buttery, and gone in five minutes. We are obviously choosing the second option.
This is my favorite way to make them when I want crisp-tender beans with real flavor. Quick blanch, fast sauté, then a finish of butter, garlic, lemon, and a pinch of red pepper. The beans stay snappy, the garlic gets fragrant, and the lemon makes everything taste like it woke up and chose joy.
