Common Questions
Are green beans the same as green string beans?
Yep. Same vegetable, different name. You might also see them called string beans, snap beans, or haricots verts. Haricots verts are usually thinner and cook a bit faster.
Do I have to trim the ends?
You do not have to trim both ends, but I recommend snapping or cutting off the stem end. If your beans are very fresh, you can line them up and trim a handful at once.
How do I keep green beans crisp and not mushy?
Two things: do not over-blanch and finish with a quick sauté. Pull them from the boiling water when they are bright green and just barely tender, then cool them quickly so they stop cooking. After that, the skillet step is just long enough to heat and gloss them, not turn them soft.
Can I make these ahead for a holiday?
Yes. Blanch the beans up to 24 hours ahead, cool quickly, then chill. Right before serving, sauté with garlic and finish with butter and lemon. This keeps the texture way better than fully cooking them early.
What can I add to make them feel fancy?
- Toasted almonds or pine nuts
- Grated Parmesan
- Crispy breadcrumbs
- Crumbled bacon
- Thinly sliced shallot (swap for some or all of the garlic)
- A quick splash of chicken broth at the end for extra gloss
