Are these corn tortillas or flour tortillas?
These are Mexican-style flour tortillas. Corn tortillas use masa harina and a different technique, and people often use a tortilla press (though you can shape them by hand too). If you want corn, tell me and I will happily take you down that road.
Can I make tortillas without lard?
Yes. Lard gives the most classic flavor and tenderness, but you can swap in vegetable shortening 1:1. You can also use a neutral oil, but the tortillas tend to be a bit less tender and less layered than ones made with a solid fat.
Why are my tortillas stiff or cracking?
Usually one of three things: the dough is too dry (add a teaspoon of warm water at a time), the tortillas were overcooked (they should not get crisp), or they were not stacked and covered after cooking.
Do I need a tortilla press?
Nope. A rolling pin is perfect for flour tortillas. Presses are more common for corn tortillas, but they are not required.
Can I make them ahead for a party?
Absolutely. Cook them earlier in the day, cool, then reheat quickly on a skillet right before serving. They bounce back fast.
Can I use whole wheat flour?
Yes. Try swapping in 1 cup whole wheat flour for 1 cup of the all-purpose. Whole wheat absorbs more water, so be ready to add an extra tablespoon or two of warm water if the dough feels tight.
