Rutabaga, but make it craveable. Roast it with honey, garlic, and thyme until caramelized, then finish with lemon and flaky salt.
Baby carrots are the MVP of my fridge. They are already peeled, already bite-sized, and they go from “sad snack bag” to “wait, why are these so good?” with about five minutes of effort.
This recipe is my favorite upgrade: roast them hot so you get those caramelized edges, then toss them in a quick honey-garlic-butter glaze that clings to every carrot like it has a job to do. It is sweet, savory, a little tangy from lemon, and absolutely legal to eat straight off the sheet pan.
