Orzo pasta salad is my go-to when I want something that feels like a real meal but behaves like a salad. It is cozy-carb enough to satisfy, but still bright and crunchy with the right mix-ins. This version leans Mediterranean with cucumbers, tomatoes, feta, herbs, and a lemon-Dijon dressing that makes you keep “just tasting” until half the bowl is mysteriously gone.
It is also weeknight-friendly. Boil the orzo, shake the dressing in a jar, chop a few things, then toss it all together. Bonus: it gets even better after a short rest in the fridge, which means you can make it ahead and look extremely put-together later.
