What is the best whiskey for a Whiskey Sour?
Bourbon is my default because it is naturally a little sweeter and vanilla-forward, which is perfect with lemon. Rye is spicier and drier, also great if you want more bite. Use something you like to sip, but it does not need to be expensive.
Do I have to use egg white?
Nope. Egg white adds a creamy foam and a softer mouthfeel, but the drink still tastes great without it. If you want foam without egg, use aquafaba (the liquid from a can of chickpeas), about 3/4 to 1 ounce.
Is it safe to use raw egg white in a cocktail?
There is always some risk with raw egg. If you are concerned, use pasteurized egg whites from a carton (it lowers the risk, though it does not make it zero), or skip it and go egg-free.
My sour tastes too sharp. How do I fix it?
Add 1 teaspoon maple syrup, shake again with ice, and taste. You can also add a tiny splash of water to mellow it without making it sweeter.
My sour tastes too sweet. How do I fix it?
Add 1 to 2 teaspoons lemon juice, shake again, and re-taste. A couple drops of bitters also help pull things back into balance.
Can I make this into a big batch for a party?
Yes. Multiply the whiskey, lemon, and maple. Keep it cold. Shake individual servings with ice for the best texture. If you batch it already diluted, it will taste flatter and less lively.
