Oven roasted broccoli is one of those kitchen glow-ups that feels like cheating. You take a very normal vegetable, hit it with high heat, and suddenly it has crisp, toasty edges and a tender, almost sweet center. That browned flavor is the whole point, so we are not babying it.
My go-to version is simple and loud in the best way: olive oil, garlic, a little heat if you want it, then a lemon squeeze at the end. Parmesan is optional, but also, come on. If you want broccoli that people “accidentally” keep picking at while dinner finishes, this is the one.
