Common Questions
Can I use water instead of milk in pancakes?
Yes. Water works surprisingly well. Milk adds a little sweetness and richness, so this recipe uses a touch of sugar and melted butter or oil to keep the flavor rounded.
How do I make these pancakes dairy free?
Use neutral oil instead of butter, or use dairy free butter. Also check that your toppings are dairy free. The pancakes themselves are naturally fine with water.
Are these pancakes vegan?
Not as written, because there is an egg. If you need egg free, you can try swapping in 1 flax egg (1 tablespoon ground flax + 3 tablespoons water, rested 5 minutes). The pancakes will be a bit more tender and less lofty, but still very snackable.
Why are my pancakes dense?
Usually one of three things: (1) you overmixed the batter, (2) your baking powder is old, or (3) you skipped the rest so the flour did not fully hydrate. It can also happen if the pan is too cool and the batter spreads too much before it sets. Mix just until you stop seeing dry flour and let the batter rest 5 minutes.
Can I make the batter ahead of time?
I do not love it overnight because baking powder starts working right away. If you need a head start, mix the dry ingredients in one bowl and the wet ingredients in another, then combine right before cooking.
What is the best pan temperature?
Medium or medium-low. If the pan smokes, it is too hot. If the pancake takes forever to bubble and looks pale, it is too cool. A drop of water should sizzle and dance, not vanish instantly.
My batter looks too thick or too thin. What now?
Pancake batter should pour easily but not run like water. If it is too thick, add 1 to 2 tablespoons water at a time. If it is too thin, sprinkle in 1 to 2 tablespoons flour and stir gently.
