There are two kinds of soup people: the “this is fine” crowd and the “give me a spoon and five minutes of silence” crowd. Panera-style broccoli cheddar soup is for the second group. It is creamy without being heavy, packed with broccoli, and unapologetically cheddar-forward.
This is my at-home version inspired by the café favorite, with accessible ingredients and a couple of small moves that make it taste like the real deal. We build a quick veggie base, thicken it gently, then melt in sharp cheddar at the end so it stays smooth and glossy. Bonus: you can blend it as silky or as chunky as you want.
