Pastor tacos are one of those bites that can stop a conversation. You get rich chile flavor, a tangy zip, sweet pineapple, and pork with those crispy little edges that make you hover over the skillet “just checking” until half of it mysteriously disappears.
Traditional tacos al pastor are cooked on a vertical spit (trompo). At home, we are going for the same big flavor and caramelized vibes using a simple blender marinade and a hot pan. It is friendly, fast, and honestly kind of therapeutic. Marinate, sear, snack, repeat.
