These are my plain chocolate cupcakes, which is a very polite way of saying: dependable little cocoa bombs that disappear faster than you can find the sprinkles. They are soft, chocolatey without being overly sweet, and sturdy enough to carry frosting, fruit, or a dramatic scoop of ice cream if you feel like choosing chaos.

No fancy ingredients, no weird steps. Just a batter you can mix in one bowl, a quick bake, and that classic cupcake vibe that tastes like every good birthday party you have ever been to.

Big chocolate flavor with pantry cocoa: Blooming the cocoa with hot coffee or hot water makes the chocolate taste deeper without extra fuss.
Tender, moist crumb: Oil keeps these cupcakes soft and plush longer than many butter-based cupcakes. For the best texture, bring them to room temperature if they have been chilled.
Low drama mixing: One bowl, whisk and spatula. The batter is thin on purpose, which bakes up light instead of dense.

Texture tip: The fridge can firm up any cake. Let chilled cupcakes sit at room temperature for 20 to 30 minutes before eating so the crumb softens again.

Freezer: Freeze unfrosted cupcakes wrapped individually, then sealed in a freezer bag for up to 2 months. Thaw, still wrapped, at room temperature for about an hour. Frost after thawing for the best texture.

Common Questions

Why is my cupcake batter so thin?

Totally normal. Cocoa and oil-based batters are often looser, especially once you add the hot coffee or water. Thin batter bakes up lighter and more tender.

Can I make these without coffee?

Yes. Use hot water instead. Coffee just boosts the chocolate flavor without making the cupcakes taste like coffee.

How do I keep cupcakes from drying out?

Do not overbake. Start checking at 16 minutes. Also, measure flour by spooning it into the cup and leveling it off, or use a kitchen scale.

Can I use Dutch-process cocoa?

Yes, with a small note. Dutch-process cocoa is less acidic, so it does not “spark” baking soda as much as natural cocoa does. This recipe still rises well because it uses baking powder too, but for the most consistent dome and lift, natural cocoa is the safest pick. If you bake with Dutch-process often and want to guarantee the same rise every time, swap the milk for buttermilk (same amount) to add a little extra acidity.

Can I turn this into a cake?

You can bake it as an 8-inch square or 9-inch round cake. Bake at 350°F (175°C) and start checking around 25 minutes. The toothpick test still applies.
